How a worn baseline changes the way a match is played
Grass wears where players stand, and by the later stages the court a match is played on is materially different from the one it started as.

Where the surface goes first
Wear is not random; it concentrates in the areas that receive the most footfall, which are the service delivery areas and the middle of the baseline. Those regions lose their grass covering and expose the soil beneath, which behaves very differently from an intact surface. The result is a court with two distinct surfaces on it, and a ball landing on a worn patch does not behave as one landing on grass does.
Players notice this well before it is visible from a distance, because the sound and the feel of the bounce change before the appearance does. By the later stages of a long event the difference is substantial enough to affect shot selection directly.
How the bounce changes
Bare soil grips the ball more than grass does, which means a ball landing on it loses more forward speed and bounces slightly higher. Spin also has more effect, since there is something for the rotation to bite against, and a heavy topspin ball begins to kick as it would elsewhere. The practical consequence is that the extreme low skid of a fresh grass court gradually gives way to something a little more conventional.
That favours baseline players, whose usual patterns become viable in a way they were not during the opening days. It correspondingly reduces the advantage held by players whose game depends on the ball staying very low.
Footing on a bare surface
The worn areas offer different traction from the grass around them, and the difference is not consistent because it depends on moisture. Dry soil can be loose and slippery, while damp soil can grip firmly, so a player may find the same patch behaving differently at different times. This inconsistency is more troublesome than either extreme, since it prevents the player from calibrating his deceleration reliably.
Players respond by choosing where to plant, sometimes taking an extra step to place the push-off foot on intact grass rather than on bare ground. That adjustment costs a fraction of time and it is preferable to the risk of a foot sliding at the moment of a hard direction change.
Serving into a changed area
The regions where serves land also wear, which changes what the serve does after the bounce and therefore what the server can rely on. A slice serve that skidded low and away earlier may sit up slightly once the landing area is bare, which removes part of its threat. Servers adjust by changing targets, sometimes aiming into areas that have received less traffic in order to preserve the behaviour they want.
That is a very fine adjustment and it is one of the details that distinguishes players with extensive experience on the surface. It also explains why serving patterns can change noticeably between the early and late stages of the same event.
Reading the court as a variable
Most surfaces are treated as fixed conditions that a player adapts to once and then ignores for the duration of a match. Grass has to be re-read, because the court in the final set is not the court that the first set was played on. Players who continue to use the patterns that worked early can find them producing different results without any change in their execution.
The adjustment is usually small, involving a slightly different length or a change in how far behind the baseline the player stands. Recognising that the change is in the court rather than in one's own play is itself a skill, and it prevents a great deal of unnecessary technical fiddling.
